  • 16 oz whole kernel corn drained
  • 8 oz cream cheese softened
  • 0.5 cup unsalted butter melted
  • 0.5 cup sour cream
  • 2 eggs large
  • 0.25 cup granulated sugar
  • 0.75 cup cornmeal
  • 1 tsp baking powder
  • 0.5 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. Beat softened cream cheese in a large bowl until smooth.
  3. Mix in melted butter and sour cream until fully combined.
  4. Add eggs one at a time, mixing well after each.
  5. Stir in sugar and salt.
  6. Fold in corn kernels.
  7. In a separate bowl, whisk cornmeal and baking powder.
  8. Gradually mix dry ingredients into wet mixture.
  9. Pour batter into prepared baking dish and smooth the top.
  10. Bake for 45 minutes until set and lightly golden.
  11. Cool slightly before serving.
