Ingredients
  

  • 2 cups shredded chicken cooked
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 1 can (4 oz) diced green chilies
  • 2 cups shredded cheddar cheese divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1 can (10 oz) enchilada sauce red or green
  • 8 flour tortillas 8-inch size
  • fresh cilantro chopped, for garnish

Method
 

  1. Mix cream cheese, sour cream, shredded chicken, green chilies, 1 cup cheese, and spices in a bowl until creamy.
  2. Fill tortillas with about 1/3 cup mixture, roll, and place seam-side down in baking dish.
  3. Pour enchilada sauce over the tortillas and top with remaining cheese.
  4. Bake covered at 375°F for 20 minutes, then uncover and bake another 10 minutes until bubbly.
  5. Garnish with cilantro and serve warm.

Notes

Make ahead: assemble enchiladas, refrigerate, and bake just before serving. For extra flavor, mix some salsa into the cream cheese filling.
