Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 2 cups canned artichoke hearts drained
  • 3 cups vegetable broth
  • 0.75 cup heavy cream
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat. Sauté onion until soft.
  2. Add garlic and cook briefly until fragrant.
  3. Stir in artichoke hearts and cook for 2–3 minutes.
  4. Add vegetable broth and simmer for 10–12 minutes.
  5. Blend soup until smooth using an immersion blender.
  6. Stir in heavy cream and season with salt and pepper.
  7. Simmer gently for 5 minutes and serve warm.

Notes

Adjust cream and seasoning to taste. Add lemon juice for brightness.
