- Mash avocado with salt and pepper until creamy.
- Butter one side of each bread slice.
- Layer avocado and cheese between bread slices, buttered sides out.
- Cook in skillet over medium-low heat until golden and cheese melts.
- Flip carefully and cook the second side until crisp.

Use ripe avocados and cook slowly for best results.
