Ingredients
  

Pasta Salad
  • 12 oz pasta rotini or fusilli
  • 2 cups romaine hearts chopped
  • 1 avocado diced
  • 0.5 cup parmesan cheese shaved or grated
  • 0.33 cup red onion thinly sliced, optional
  • 1 cup cherry tomatoes halved, optional
Dressing
  • 0.5 cup Caesar dressing
  • 0.25 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic minced or grated
  • 0.25 tsp black pepper
  • salt to taste

Equipment

  • Mixing bowls

Method
 

  1. Cook pasta according to package instructions until al dente. Rinse under cold water and let cool completely.
  2. In a bowl, whisk together Caesar dressing, Greek yogurt, lemon juice, Dijon mustard, garlic, pepper, and salt.
  3. Combine cooled pasta, romaine, parmesan, and red onion in a large bowl.
  4. Pour dressing over ingredients and toss gently to coat.
  5. Fold in diced avocado carefully to avoid mashing.
  6. Chill for 30 minutes before serving. Add croutons or toppings just before eating.

Notes

Add avocado just before serving for best texture.
