Ingredients
  

Chicken
  • 2 chicken breasts boneless, skinless
  • 2 tbsp Cajun seasoning
Pasta
  • 250 g pasta
Sauce
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup milk
  • 1 cup parmesan cheese grated
  • 1 tsp paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 1 onion chopped
  • 1 red bell pepper sliced
  • 1 tbsp tomato paste optional
  • fresh parsley for garnish

Equipment

  • Large skillet
  • Pot for pasta
  • Cutting board
  • Knife

Method
 

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Season chicken with Cajun seasoning.
  3. Heat olive oil in a skillet and cook chicken until done. Remove and slice.
  4. Melt butter in the same skillet and sauté onion, garlic, and bell pepper.
  5. Add cream, milk, paprika, salt, pepper, and tomato paste. Simmer gently.
  6. Stir in parmesan cheese until smooth.
  7. Add pasta and chicken back to the skillet and toss to coat.
  8. Garnish with parsley and serve warm.

Notes

Adjust Cajun seasoning to control spice level. Add pasta water if sauce becomes too thick.
