Ingredients
  

Pasta
  • 12 oz pasta penne or fettuccine
  • 14 oz smoked sausage sliced
  • 2 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1.5 cups heavy cream
  • 0.5 cup chicken broth
  • 1.5 tbsp Cajun seasoning
  • 0.5 tsp smoked paprika
  • 0.5 cup Parmesan cheese grated

  • Large skillet
  • Wooden spoon

Method
 

  1. Cook pasta in salted water until al dente. Reserve pasta water and drain.
  2. Brown sausage slices in a large skillet until caramelized. Remove and set aside.
  3. Melt butter in the same skillet and sauté garlic until fragrant.
  4. Add chicken broth and simmer briefly, scraping up browned bits.
  5. Stir in cream, Cajun seasoning, and paprika. Simmer until slightly thickened.
  6. Add Parmesan and stir until smooth.
  7. Return sausage and pasta to skillet and toss to coat.
  8. Adjust sauce with reserved pasta water if needed and serve.

Notes

Adjust Cajun seasoning to control spice level.
