Ingredients
  

Pasta
  • 12 oz pasta
  • 14 oz smoked sausage sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 onion diced
  • 2 bell peppers sliced
  • 3 cloves garlic minced
  • 2 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • 0.5 tsp black pepper
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.75 cup Parmesan cheese grated
  • Salt to taste
  • Fresh parsley for garnish

Method
 

  1. Cook pasta according to package instructions until al dente. Reserve pasta water and drain.
  2. Brown sliced sausage in a skillet with olive oil. Remove and set aside.
  3. Sauté onion and peppers in butter until softened. Add garlic and cook briefly.
  4. Stir in Cajun seasoning, paprika, and black pepper.
  5. Pour in chicken broth and cream. Simmer gently.
  6. Add Parmesan and stir until sauce is smooth.
  7. Return sausage and add cooked pasta. Toss to coat.
  8. Adjust seasoning, garnish with parsley, and serve.

Notes

Adjust spice level to taste. Add pasta water if sauce becomes too thick.
