- Cook pasta according to package instructions until al dente. Reserve pasta water and drain.
- Brown sliced sausage in a skillet with olive oil. Remove and set aside.
- Sauté onion and peppers in butter until softened. Add garlic and cook briefly.
- Stir in Cajun seasoning, paprika, and black pepper.
- Pour in chicken broth and cream. Simmer gently.
- Add Parmesan and stir until sauce is smooth.
- Return sausage and add cooked pasta. Toss to coat.
- Adjust seasoning, garnish with parsley, and serve.
Notes
Adjust spice level to taste. Add pasta water if sauce becomes too thick.
