  • 12 oz pasta fettuccine or penne
  • 1 lb chicken breasts sliced thin
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 8 oz mushrooms sliced
  • 3 cloves garlic minced
  • 0.5 onion finely chopped
  • 1.5 cups heavy cream
  • 0.5 cup chicken broth
  • 0.75 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 0.5 tsp crushed red pepper flakes optional
  • salt and pepper to taste
  • fresh parsley for garnish

Method
 

  1. Boil pasta until al dente, reserve ½ cup pasta water, then drain.
  2. Season and sear chicken in olive oil until golden and cooked through. Set aside.
  3. Sauté mushrooms, onion, and garlic in butter until tender.
  4. Add broth and cream, simmer until slightly thickened.
  5. Stir in Parmesan and seasonings. Toss in pasta and chicken.
  6. Add pasta water as needed for creaminess, garnish with parsley, and serve.

Notes

Use freshly grated Parmesan for the best texture. Add spinach or bacon for extra flavor.
