Chicken and Spinach Casserole
  • 4 cups cooked chicken shredded or cubed
  • 4 cups fresh spinach chopped
  • 8 oz cream cheese softened
  • 1 cup mozzarella cheese shredded, divided
  • 0.5 cup parmesan cheese grated
  • 1 small onion diced
  • 3 cloves garlic minced
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 tsp Italian seasoning optional

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Sauté onion and garlic until softened (optional but recommended).
  3. In a mixing bowl, combine cream cheese, chicken broth, heavy cream, parmesan, paprika, salt, pepper, and Italian seasoning.
  4. Fold in cooked chicken, sautéed aromatics, and chopped spinach.
  5. Stir in half of the mozzarella.
  6. Transfer mixture to a greased 9x13 baking dish.
  7. Top with remaining mozzarella.
  8. Bake for 25–30 minutes until bubbly and golden.

Notes

Use fresh spinach for best texture. Add bacon, mushrooms, or broccoli for variations.
