Chicken
  • 1.5 lbs chicken breasts cut into cubes
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Creamy Feta Sauce
  • 2 tbsp olive oil or butter
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 0.5 cup chicken broth
  • 0.75 cup heavy cream
  • 0.5 tsp dried oregano
  • 0.5 tsp red pepper flakes optional
  • 0.5 cup feta cheese crumbled
  • 0.5 lemon juiced
  • 2 tbsp parsley chopped

Method
 

  1. Season chicken with olive oil, paprika, garlic powder, onion powder, salt, and pepper.
  2. Sear chicken in a skillet until golden and cooked through. Remove from pan.
  3. Sauté onion in olive oil, then add garlic.
  4. Pour in chicken broth, cream, oregano, and red pepper flakes. Simmer until slightly thickened.
  5. Stir in feta cheese and lemon juice until creamy.
  6. Return chicken to the sauce and simmer for 2 minutes.
  7. Serve over rice or couscous, garnished with parsley and extra feta.

Notes

Use high-quality feta for best texture. Add spinach for extra greens.
