- Cook penne pasta according to package directions until al dente. Reserve some pasta water and drain.
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with fajita seasoning, smoked paprika, chili powder, salt, and pepper.
- Cook chicken until golden and fully cooked. Remove and set aside.
- In the same skillet, sauté onions and bell peppers until softened.
- Add garlic and tomato paste, cooking for 1 minute until fragrant.
- Pour in chicken broth and heavy cream. Stir until combined.
- Add parmesan cheese and stir until smooth and creamy.
- Return chicken to the skillet and mix well.
- Add cooked pasta and toss to coat evenly in the sauce.
- Adjust sauce consistency with reserved pasta water if needed.
- Finish with lime juice, parsley, and additional parmesan before serving.
Notes
For extra spice, add jalapeños or red pepper flakes. Fresh parmesan creates the smoothest sauce texture.
