Ingredients
  

Pasta
  • 12 oz penne pasta
Chicken and Vegetables
  • 2 chicken breasts sliced into strips
  • 2 tbsp olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 onion sliced
  • 3 cloves garlic minced
Seasonings and Sauce
  • 2 tsp fajita seasoning
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup parmesan cheese freshly grated
  • 1 tbsp tomato paste
  • 1 tsp lime juice
Garnish
  • 2 tbsp fresh parsley chopped
  • 0.25 cup parmesan cheese for serving

Method
 

  1. Cook penne pasta according to package directions until al dente. Reserve some pasta water and drain.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Season chicken with fajita seasoning, smoked paprika, chili powder, salt, and pepper.
  4. Cook chicken until golden and fully cooked. Remove and set aside.
  5. In the same skillet, sauté onions and bell peppers until softened.
  6. Add garlic and tomato paste, cooking for 1 minute until fragrant.
  7. Pour in chicken broth and heavy cream. Stir until combined.
  8. Add parmesan cheese and stir until smooth and creamy.
  9. Return chicken to the skillet and mix well.
  10. Add cooked pasta and toss to coat evenly in the sauce.
  11. Adjust sauce consistency with reserved pasta water if needed.
  12. Finish with lime juice, parsley, and additional parmesan before serving.

Notes

For extra spice, add jalapeños or red pepper flakes. Fresh parmesan creates the smoothest sauce texture.
