Ingredients
  

Soup Base
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 2 tbsp flour
  • 6 cups chicken broth
  • 2 cups cooked chicken shredded
  • 1.5 cups egg noodles
  • 1 cup heavy cream
  • 1 tsp thyme
  • 1 tsp parsley

Method
 

  1. Heat butter and oil, sauté onion until soft.
  2. Add garlic, carrots, and celery and cook until tender.
  3. Stir in flour and cook briefly.
  4. Add broth gradually and bring to simmer.
  5. Add chicken and seasonings, simmer 10 minutes.
  6. Cook noodles until tender.
  7. Stir in cream and simmer until thickened.

Notes

Adjust thickness with broth or cream as desired. Add vegetables for variation.
