Pasta
  • 12 oz spaghetti
Chicken & Sauce
  • 2 cups cooked chicken shredded or diced
  • 2 tbsp butter
  • 0.5 onion diced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 8 oz cream cheese softened
  • 0.75 cup heavy cream
  • 1.25 cups cheddar cheese shredded
  • 1 tsp Italian seasoning
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper

Method
 

  1. Cook spaghetti in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Sauté onion and garlic in butter over medium heat until softened.
  3. Stir in chicken broth and cream cheese; whisk until smooth and melted.
  4. Add heavy cream, cheddar cheese, Italian seasoning, salt, and pepper. Stir until creamy.
  5. Add chicken and cook until heated through.
  6. Toss sauce with cooked spaghetti, adding pasta water as needed to loosen.
  7. Serve warm or bake with extra cheese if desired.

Add vegetables or bake with extra cheese for variation.
