- Preheat oven to 375°F (190°C) and grease a casserole dish.
- Season diced chicken with salt, pepper, paprika, and garlic powder.
- Sauté onion in olive oil until soft, then add mushrooms and garlic.
- Add spinach and cook until wilted.
- Stir in cream and chicken broth to create the sauce.
- Add chicken to the skillet mixture and stir well.
- Transfer mixture to a baking dish and top with cheeses.
- Bake for 25–30 minutes until chicken is cooked and cheese is golden.
Notes
You can add pasta or extra vegetables for a heartier casserole.
