Ingredients
  

Crepes
  • 1 cup all-purpose flour
  • 2 eggs large
  • 1.5 cups milk
  • 2 tbsp butter melted
  • 0.25 tsp salt
Chicken Filling
  • 2 cups cooked shredded chicken
  • 2 tbsp butter
  • 2 tbsp flour
  • 1.5 cups milk
  • 0.5 cup chicken broth
  • 1 cup shredded cheese
  • 0.25 cup Parmesan cheese
Cream Sauce
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 0.25 cup Parmesan cheese

Method
 

  1. Whisk flour, eggs, milk, melted butter, and salt until smooth. Rest 10 minutes.
  2. Cook thin crepes in a lightly greased skillet until lightly golden on both sides.
  3. Make filling by cooking butter and flour, then whisking in milk and broth until thick.
  4. Add chicken and cheese, stirring until creamy.
  5. Fill crepes, roll, and place in baking dish.
  6. Prepare sauce with butter, flour, milk, and Parmesan.
  7. Pour sauce over crepes and bake at 350°F for 15–20 minutes.

Notes

Use rotisserie chicken for convenience. Crepes can be made ahead and refrigerated.
