Method
- Whisk flour, eggs, milk, melted butter, and salt until smooth. Rest 10 minutes.
- Cook thin crepes in a lightly greased skillet until lightly golden on both sides.
- Make filling by cooking butter and flour, then whisking in milk and broth until thick.
- Add chicken and cheese, stirring until creamy.
- Fill crepes, roll, and place in baking dish.
- Prepare sauce with butter, flour, milk, and Parmesan.
- Pour sauce over crepes and bake at 350°F for 15–20 minutes.
Notes
Use rotisserie chicken for convenience. Crepes can be made ahead and refrigerated.
