- Sear beef quickly in olive oil until browned, then remove from skillet.
- Melt butter in the same skillet and cook onions until soft.
- Add garlic and mushrooms, cooking until mushrooms are golden.
- Sprinkle flour over mixture and cook briefly.
- Gradually stir in beef broth, Worcestershire sauce, and Dijon mustard.
- Simmer sauce until thickened.
- Lower heat and stir in sour cream.
- Return beef to pan, heat through, season, and serve.
Notes
Do not boil after adding sour cream to maintain a smooth sauce.
