  • 1 lb boneless skinless chicken cubed
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1.5 cups long-grain white rice uncooked
  • 3 cups chicken broth
  • 0.75 cup heavy cream
  • 1 cup Parmesan cheese freshly grated

Method
 

  1. Heat olive oil and butter in a skillet over medium heat.
  2. Cook seasoned chicken until lightly golden; remove and set aside.
  3. Sauté garlic briefly, then stir in rice.
  4. Add chicken broth, cover, and simmer until rice is tender.
  5. Stir in cream and Parmesan until creamy.
  6. Return chicken and cook until heated through.

Notes

Adjust creaminess by adding extra broth or cream when reheating.
