Ingredients
  

  • 2 lbs potatoes peeled and diced
  • 2 bulbs garlic roasted
  • 1 medium yellow onion chopped
  • 3 tbsp unsalted butter
  • 4 cups vegetable broth
  • 0.5 cup heavy cream
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper

Method
 

  1. Roast garlic at 400°F (200°C) until soft and golden, about 35–40 minutes.
  2. Sauté onion in butter until translucent.
  3. Add potatoes and broth, bring to a boil, then simmer until tender.
  4. Add roasted garlic and blend soup until smooth.
  5. Stir in cream, season, and warm gently before serving.

Notes

Adjust thickness with additional broth if needed.
