Ingredients
  

  • 1.5 lb sea scallops patted dry
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 1 tsp Italian seasoning
  • 2 cups baby spinach

Equipment

  • Large skillet
  • Tongs
  • Cutting board
  • Knife

Method
 

  1. Season scallops with salt and pepper.
  2. Sear scallops in hot oil for 2–3 minutes per side. Remove and set aside.
  3. Melt butter and sauté garlic until fragrant.
  4. Add sun-dried tomatoes and seasoning.
  5. Pour in cream and stir in parmesan.
  6. Add spinach and cook until wilted.
  7. Return scallops to pan and simmer briefly.

Notes

Serve immediately for best texture.
