Method
- Season scallops with salt and pepper.
- Sear scallops in hot oil for 2–3 minutes per side. Remove and set aside.
- Melt butter and sauté garlic until fragrant.
- Add sun-dried tomatoes and seasoning.
- Pour in cream and stir in parmesan.
- Add spinach and cook until wilted.
- Return scallops to pan and simmer briefly.
