Ingredients
  

  • 1 lb Italian sausage mild or spicy
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 carrots chopped
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes optional
  • 6 cups chicken broth
  • 1 cup orzo pasta uncooked
  • 2 cups baby spinach fresh
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • salt and pepper to taste
  • fresh parsley chopped, for garnish

Method
 

  1. In a large pot, heat olive oil and cook sausage until browned.
  2. Add onion, carrots, and garlic. Sauté until softened.
  3. Season with oregano, red pepper flakes, salt, and pepper.
  4. Pour in chicken broth and bring to a boil.
  5. Add orzo pasta and simmer until tender, about 10 minutes.
  6. Stir in heavy cream and Parmesan until smooth.
  7. Add spinach and stir until wilted. Adjust seasoning.
  8. Garnish with parsley and serve warm.

Notes

For best flavor, use freshly grated Parmesan. Orzo absorbs liquid, so add extra broth if reheating. Freeze before adding cream and spinach for longer storage.
