Ingredients
  

Pasta Salad
  • 3 cups cooked pasta
  • 2 cups kale chopped
  • 1 can chickpeas drained
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.25 cup red onion sliced
  • 0.25 cup parmesan cheese
Dressing
  • 0.5 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • 1 tsp honey

Method
 

  1. Cook pasta according to package instructions and cool.
  2. Season and roast chickpeas at 400°F until crispy.
  3. Massage kale with olive oil and salt until softened.
  4. Whisk together dressing ingredients until smooth.
  5. Combine pasta, kale, onion, and cheese.
  6. Toss with dressing until coated.
  7. Top with crispy chickpeas and serve.

Notes

Add chickpeas just before serving for best texture.
