Ingredients
  

  • 8 oz spaghetti or linguine
  • 0.75 cup kimchi chopped
  • 1 tbsp butter
  • 2 cloves garlic minced
  • 0.5 cup heavy cream or half-and-half
  • 1 tbsp gochujang optional
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • salt and pepper to taste
  • 1 green onion chopped, for garnish
  • sesame seeds for garnish
  • Parmesan cheese optional

Method
 

  1. Cook pasta in salted water until al dente. Reserve ½ cup pasta water and drain.
  2. Melt butter in a skillet and sauté garlic for 30 seconds. Add chopped kimchi and cook 2–3 minutes.
  3. Stir in soy sauce, sesame oil, and gochujang. Add cream and simmer 2–3 minutes until slightly thickened.
  4. Add pasta and toss to coat, adding reserved water if needed.
  5. Season with salt and pepper. Garnish with green onions, sesame seeds, and Parmesan.

Notes

Use well-fermented kimchi for bold flavor. Adjust cream or pasta water for your preferred sauce thickness.
