- Cook pasta in salted water until al dente. Reserve ½ cup pasta water and drain.
- Melt butter in a skillet and sauté garlic for 30 seconds. Add chopped kimchi and cook 2–3 minutes.
- Stir in soy sauce, sesame oil, and gochujang. Add cream and simmer 2–3 minutes until slightly thickened.
- Add pasta and toss to coat, adding reserved water if needed.
- Season with salt and pepper. Garnish with green onions, sesame seeds, and Parmesan.
Notes
Use well-fermented kimchi for bold flavor. Adjust cream or pasta water for your preferred sauce thickness.
