Ingredients
  

Cookie Batter
  • 12 oz pasta
  • 1 cup feta cheese crumbled
  • 1 cup heavy cream
  • 1 tbsp lemon zest
  • 3 tbsp lemon juice fresh
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional
  • 0.5 cup pasta water reserved
Filling
  • fresh basil for garnish
  • extra feta for topping

Equipment

  • Mixing bowls

Method
 

  1. Cook pasta in salted water until al dente. Reserve 1/2 cup pasta water.
  2. Heat olive oil in a skillet and sauté garlic for 30 seconds.
  3. Stir in cream, lemon zest, and lemon juice; warm gently.
  4. Add feta and stir until melted, adding pasta water as needed.
  5. Season with salt, pepper, and red pepper flakes.
  6. Toss pasta in the sauce until fully coated.
  7. Serve with extra feta, basil, and lemon zest.

Notes

Adjust lemon to taste. Add vegetables or protein for variation.
