Ingredients
  

Lentil Hummus Base
  • 2 cups cooked lentils green or brown
  • 0.25 cup tahini
  • 3 tbsp olive oil plus extra for garnish
  • 2 tbsp lemon juice freshly squeezed
  • 2 garlic cloves
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2-4 tbsp cold water as needed
Garnish
  • 1 tbsp fresh parsley chopped
  • 0.25 tsp paprika

Method
 

  1. Cook lentils until tender, drain thoroughly, and cool slightly.
  2. Add lentils, tahini, olive oil, lemon juice, garlic, cumin, smoked paprika, salt, and black pepper to a food processor.
  3. Blend until smooth, scraping sides as necessary.
  4. Gradually add cold water until desired creamy texture is reached.
  5. Taste and adjust seasoning if needed.
  6. Transfer dip to serving bowl and create decorative swirls.
  7. Drizzle with olive oil and garnish with parsley and paprika.
  8. Serve with pita, crackers, or fresh vegetables.

Notes

For extra smoothness, blend lentils while slightly warm. Store refrigerated for up to 5 days.
