Pasta
  • 20 oz lobster ravioli fresh or frozen
Sauce
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 tsp lemon zest
  • 2 tbsp lemon juice fresh
  • 0.5 cup Parmesan cheese grated
  • salt and black pepper to taste

Method
 

  1. Cook lobster ravioli in salted boiling water according to package directions. Reserve pasta water and drain.
  2. Melt butter with olive oil in a skillet over medium heat. Add garlic and sauté briefly until fragrant.
  3. Stir in heavy cream and simmer gently until slightly thickened.
  4. Add lemon zest, lemon juice, and Parmesan. Whisk until smooth and season to taste.
  5. Fold ravioli into sauce, adding reserved pasta water as needed for consistency.
  6. Garnish with herbs and serve immediately.
