Ingredients
  

Salad
  • 3 cups elbow macaroni uncooked
  • 1 cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar optional
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 cup celery finely chopped
  • 0.5 cup red bell pepper diced
  • 0.33 cup red onion chopped
  • 0.5 cup shredded carrots
  • 2 tbsp fresh parsley chopped

Method
 

  1. Cook macaroni in salted boiling water until al dente. Drain and rinse under cold water.
  2. Whisk together mayonnaise, sour cream, mustard, vinegar, sugar, salt, pepper, and paprika.
  3. Combine pasta with vegetables and dressing in a large bowl.
  4. Mix until evenly coated, cover, and chill for at least 1 hour before serving.

Notes

Chilling enhances flavor. Add extra mayonnaise before serving if needed.
