  • 12 oz short pasta cooked and cooled
  • 2 cups corn kernels grilled or roasted
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream
  • 2 tbsp lime juice fresh
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.75 cup cotija cheese crumbled
  • 0.25 cup fresh cilantro chopped

Method
 

  1. Cook pasta until al dente, drain, and cool completely.
  2. Whisk mayonnaise, sour cream, lime juice, and spices in a large bowl.
  3. Add pasta and corn, tossing gently to coat.
  4. Fold in cotija cheese and cilantro.
  5. Chill for 30 minutes before serving and garnish as desired.

Notes

Adjust spice level and lime juice to taste.
