Ingredients
  

Chicken
  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried thyme
  • 0.5 tsp paprika
Creamy Mushroom Sauce
  • 2 tbsp unsalted butter
  • 8 oz mushrooms sliced
  • 1 small onion finely diced
  • 4 cloves garlic minced
  • 1 tbsp all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese freshly grated
  • 1 tbsp fresh parsley chopped

  • Wooden spoon

Method
 

  1. Pat chicken breasts dry and season with salt, pepper, thyme, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 5–6 minutes per side until golden brown. Remove and set aside.
  3. Reduce heat to medium. Add butter, mushrooms, and onions to the skillet. Cook until softened and lightly browned.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Sprinkle flour over the mushroom mixture and stir well.
  6. Slowly pour in chicken broth while stirring continuously. Simmer for 2–3 minutes.
  7. Add heavy cream and parmesan cheese. Stir until smooth and creamy.
  8. Return chicken to the skillet and spoon sauce over the top.
  9. Cover and simmer for 8–10 minutes until chicken reaches an internal temperature of 165°F.
  10. Garnish with fresh parsley and serve warm.

Notes

For extra flavor, use cremini mushrooms and freshly grated parmesan cheese. Delicious served over mashed potatoes, pasta, or rice.
