Method
- Pat chicken breasts dry and season with salt, pepper, thyme, and paprika.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 5–6 minutes per side until golden brown. Remove and set aside.
- Reduce heat to medium. Add butter, mushrooms, and onions to the skillet. Cook until softened and lightly browned.
- Add garlic and cook for 1 minute until fragrant.
- Sprinkle flour over the mushroom mixture and stir well.
- Slowly pour in chicken broth while stirring continuously. Simmer for 2–3 minutes.
- Add heavy cream and parmesan cheese. Stir until smooth and creamy.
- Return chicken to the skillet and spoon sauce over the top.
- Cover and simmer for 8–10 minutes until chicken reaches an internal temperature of 165°F.
- Garnish with fresh parsley and serve warm.
Notes
For extra flavor, use cremini mushrooms and freshly grated parmesan cheese. Delicious served over mashed potatoes, pasta, or rice.
