Ingredients
  

Lasagna
  • 12 lasagna noodles
  • 2 tbsp olive oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 16 oz mushrooms sliced
  • 5 cups fresh spinach
  • 15 oz ricotta cheese
  • 1 egg
  • 1 cup parmesan cheese grated
  • 2 cups mozzarella cheese shredded
White Sauce
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 3 cups milk
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp nutmeg optional

Method
 

  1. Cook lasagna noodles according to package directions and set aside.
  2. Sauté onion and garlic in olive oil until soft.
  3. Add mushrooms and cook until browned. Stir in spinach and cook until wilted.
  4. Mix ricotta, egg, parmesan, salt, pepper, and nutmeg in a bowl.
  5. Prepare white sauce by whisking butter, flour, and milk until thick and creamy.
  6. Layer noodles, ricotta mixture, vegetables, sauce, and mozzarella in a baking dish.
  7. Repeat layers and finish with cheese on top.
  8. Bake at 375°F for 45 minutes until golden and bubbly.

Notes

Allow lasagna to rest 10–15 minutes before slicing for best texture.
