- Cook pasta in salted water until al dente; reserve pasta water and drain.
- Melt butter and sauté garlic for 1 minute.
- Whisk in flour, then add cream and broth.
- Simmer and add paprika, salt, pepper, and red pepper flakes.
- Lower heat and add pepper jack cheese until melted and smooth.
- Toss pasta in sauce, adding pasta water as needed.
- Add jalapeño if desired and garnish with parsley.
Notes
Use freshly grated pepper jack cheese for the smoothest sauce.
