- Add chickpeas, avocado, pistachios, tahini, olive oil, garlic, lemon juice, mint, cumin, and salt into a food processor.
- Blend until the mixture begins to form a thick paste.
- Scrape down the sides and continue blending until smooth and creamy.
- Slowly add cold water until desired consistency is reached.
- Taste and adjust seasoning with more salt or lemon if needed.
- Transfer to a bowl and create swirls on the surface.
- Drizzle with olive oil and top with chopped pistachios and mint.
- Serve immediately or chill briefly before serving.
Notes
Best served fresh but can be stored in the fridge for up to 4 days. Stir before serving.
