Ingredients
  

Hummus Base
  • 1 can chickpeas, drained and rinsed
  • 1 ripe avocado peeled and pitted
  • 1/3 cup shelled pistachios
  • 2 tbsp tahini
  • 2 tbsp olive oil
  • 1-2 cloves garlic minced
  • 1 lemon juiced
  • 1/4 cup fresh mint leaves
  • 1/2 tsp ground cumin
  • 1/2 tsp sea salt to taste
  • 2-4 tbsp cold water as needed

Method
 

  1. Add chickpeas, avocado, pistachios, tahini, olive oil, garlic, lemon juice, mint, cumin, and salt into a food processor.
  2. Blend until the mixture begins to form a thick paste.
  3. Scrape down the sides and continue blending until smooth and creamy.
  4. Slowly add cold water until desired consistency is reached.
  5. Taste and adjust seasoning with more salt or lemon if needed.
  6. Transfer to a bowl and create swirls on the surface.
  7. Drizzle with olive oil and top with chopped pistachios and mint.
  8. Serve immediately or chill briefly before serving.

Notes

Best served fresh but can be stored in the fridge for up to 4 days. Stir before serving.
