Overnight Oats Base
  • 1 cup rolled oats
  • 0.5 cup pumpkin purée
  • 0.5 cup Greek yogurt
  • 0.5 cup milk of choice
  • 0.33 cup cold brew or espresso
  • 2 tbsp maple syrup
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1.5 tsp pumpkin spice
  • 1 pinch salt
Optional Toppings
  • granola, whipped cream, cinnamon, pumpkin seeds as desired

Method
 

  1. Combine pumpkin purée, Greek yogurt, milk, espresso, vanilla, and maple syrup in a bowl.
  2. Stir in rolled oats, chia seeds, pumpkin spice, and salt until fully combined.
  3. Adjust consistency by adding extra milk if a creamier texture is desired.
  4. Cover and refrigerate for at least 4 hours or overnight.
  5. Stir well before serving and adjust texture with additional milk if needed.
  6. Top with granola, whipped cream, pumpkin seeds, or cinnamon before serving.

Notes

Adjust sweetness and spices to taste. Keeps up to 4 days refrigerated.
