Ingredients
  

Pasta
  • 12 oz pasta penne or fettuccine
  • 3 roasted red peppers
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 small onion diced
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp red pepper flakes optional
  • 0.25 cup pasta cooking water
  • 0.25 cup fresh basil chopped

Equipment

  • Large pot
  • Blender
  • Large skillet
  • Wooden spoon

Method
 

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions.
  2. Reserve 1/4 cup pasta water, then drain the pasta.
  3. Heat olive oil in a skillet and sauté diced onion until soft.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Add roasted red peppers, paprika, salt, and pepper and cook briefly.
  6. Transfer mixture to a blender and blend with cream and parmesan until smooth.
  7. Return sauce to skillet and simmer for several minutes.
  8. Add pasta and toss until evenly coated.
  9. Stir in basil and red pepper flakes, then serve with extra parmesan.

Notes

Use freshly roasted peppers for deeper flavor. Adjust cream amount for thicker or lighter sauce.
