Method
- Bring a large pot of salted water to a boil and cook pasta according to package instructions.
- Reserve 1/4 cup pasta water, then drain the pasta.
- Heat olive oil in a skillet and sauté diced onion until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Add roasted red peppers, paprika, salt, and pepper and cook briefly.
- Transfer mixture to a blender and blend with cream and parmesan until smooth.
- Return sauce to skillet and simmer for several minutes.
- Add pasta and toss until evenly coated.
- Stir in basil and red pepper flakes, then serve with extra parmesan.
Notes
Use freshly roasted peppers for deeper flavor. Adjust cream amount for thicker or lighter sauce.
