  • 1 lb Italian sausage casings removed
  • 1 small onion diced
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional
  • 20 oz cheese tortellini refrigerated
  • 2 cups fresh spinach
  • 0.75 cup parmesan cheese grated

Method
 

  1. Heat olive oil in a large skillet over medium heat. Cook sausage until browned, breaking it apart as it cooks.
  2. Add diced onion and cook until softened. Stir in garlic and cook until fragrant.
  3. Pour in chicken broth and heavy cream. Add Italian seasoning, salt, pepper, and red pepper flakes.
  4. Bring to a gentle simmer and add tortellini. Cook according to package directions.
  5. Stir in spinach and cook until wilted.
  6. Add parmesan cheese and stir until melted and sauce is creamy. Serve warm.

Notes

Use freshly grated parmesan for best melting texture. Adjust seasoning after adding cheese.
