Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 2 tbsp butter
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded cheddar cheese divided
  • 8 oz cooked pasta such as penne or rotini
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a large skillet, melt butter over medium heat. Sauté onion and garlic until softened.
  3. Add shrimp and cook for 2–3 minutes until just pink. Remove and set aside.
  4. Pour in heavy cream and chicken broth. Bring to a simmer, then stir in half the cheddar cheese until melted.
  5. Add cooked pasta and shrimp to the sauce. Stir to combine, then transfer to baking dish.
  6. Top with remaining cheese and bake for 15 minutes until bubbly and golden. Garnish with parsley before serving. 🦐🍲

Notes

For a lighter version, use half-and-half instead of heavy cream. Add spinach or mushrooms for extra veggies.
