- Preheat oven to 375°F (190°C) and grease a baking dish.
- Cook pasta until al dente, drain, and set aside.
- Melt butter, sauté garlic, then whisk in flour to create a roux.
- Slowly whisk in milk and cream until thickened.
- Add cheeses and spinach, stirring until creamy.
- Combine pasta with sauce and transfer to baking dish.
- Top with remaining cheese and bake 20–25 minutes until bubbly.
- Cool slightly before serving.
Notes
Add cooked chicken or mushrooms for variation. Use freshly grated cheese for best results.
