Ingredients
  

Main Ingredients
  • 8 oz pasta fettuccine, penne, or spaghetti
  • 3 cups fresh spinach roughly chopped
  • 2 cloves garlic minced
  • 1 cup heavy cream or half-and-half
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp olive oil or unsalted butter
  • to taste salt and pepper
  • optional crushed red pepper flakes for heat
  • optional extra Parmesan or toasted pine nuts for garnish

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve ½ cup pasta water and drain.
  2. In a large skillet, heat olive oil or butter over medium heat. Sauté garlic for 30 seconds.
  3. Add spinach and cook 1–2 minutes until wilted.
  4. Pour in cream and stir in Parmesan. Simmer 1–2 minutes until thickened. Season with salt, pepper, and optional red pepper flakes.
  5. Add drained pasta and toss to coat. Add reserved pasta water if sauce is too thick.
  6. Serve immediately, garnished with extra Parmesan or pine nuts.

Notes

Add cooked chicken or shrimp for extra protein if desired.
