- Cook pasta in salted boiling water until al dente. Reserve ½ cup pasta water and drain.
- In a large skillet, heat olive oil or butter over medium heat. Sauté garlic for 30 seconds.
- Add spinach and cook 1–2 minutes until wilted.
- Pour in cream and stir in Parmesan. Simmer 1–2 minutes until thickened. Season with salt, pepper, and optional red pepper flakes.
- Add drained pasta and toss to coat. Add reserved pasta water if sauce is too thick.
- Serve immediately, garnished with extra Parmesan or pine nuts.
Notes
Add cooked chicken or shrimp for extra protein if desired.
