  • 4 fillets salmon
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 shallot minced
  • 0.33 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 2 cups fresh spinach
  • 1 tbsp lemon juice optional

Method
 

  1. Season salmon with salt, pepper, and paprika.
  2. Heat olive oil and butter in a skillet and sear salmon 3–4 minutes per side. Remove and set aside.
  3. Add garlic and shallot to the skillet and sauté until fragrant.
  4. Add sun-dried tomatoes and cook briefly.
  5. Pour in broth, then stir in cream, Parmesan, and seasoning.
  6. Simmer until slightly thickened, then add spinach to wilt.
  7. Return salmon to skillet and simmer 2–3 minutes.
  8. Serve warm with fresh basil or parsley.

Notes

Adjust sauce thickness by adding extra broth or more Parmesan.
