Method
- Season salmon with salt, pepper, and paprika.
- Heat olive oil and butter in a skillet and sear salmon 3–4 minutes per side. Remove and set aside.
- Add garlic and shallot to the skillet and sauté until fragrant.
- Add sun-dried tomatoes and cook briefly.
- Pour in broth, then stir in cream, Parmesan, and seasoning.
- Simmer until slightly thickened, then add spinach to wilt.
- Return salmon to skillet and simmer 2–3 minutes.
- Serve warm with fresh basil or parsley.
Notes
Adjust sauce thickness by adding extra broth or more Parmesan.
