Creamy Tuscan Skillet Salmon

Ingredients
  

Salmon
  • 4 salmon fillets
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup parmesan cheese grated
  • 0.5 cup sun-dried tomatoes chopped
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 0.5 lemon juiced
  • salt and pepper to taste

Method
 

  1. Season salmon with salt, pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear salmon for 4–5 minutes until golden, flip and cook another 2–3 minutes.
  4. Remove salmon from the skillet and set aside.
  5. Melt butter in the same skillet and sauté garlic.
  6. Add chicken broth and heavy cream and stir well.
  7. Mix in parmesan, sun-dried tomatoes, and Italian seasoning.
  8. Simmer until sauce thickens slightly.
  9. Add spinach and allow it to wilt.
  10. Return salmon to the skillet and spoon sauce over the fillets.
  11. Finish with lemon juice and garnish with parsley before serving.

Notes

Serve over pasta, rice, or with crusty bread to enjoy the creamy sauce.
