Crispy Bacon Jalapeño Popper Egg Rolls

A crispy, cheesy twist on classic jalapeño poppers! These egg rolls are loaded with cream cheese, cheddar, jalapeños, and smoky bacon, then fried to golden perfection.

Ingredients
  

  • 8 egg roll wrappers
  • 4 oz cream cheese softened
  • 1/2 cup shredded cheddar cheese
  • 3 jalapeños seeded and finely diced
  • 4 strips cooked bacon crumbled
  • 2 green onions thinly sliced
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • pinch salt
  • pinch black pepper
  • 1 egg beaten, for sealing
  • oil for frying vegetable or canola

Equipment

  • Mixing bowl
  • Skillet or deep fryer
  • Tongs
  • Paper towels

Method
 

  1. In a bowl, mix cream cheese, cheddar, jalapeños, bacon, green onions, garlic powder, paprika, salt, and pepper until blended.
  2. Place an egg roll wrapper in diamond shape and add 2–3 tablespoons of filling.
  3. Fold bottom corner over filling, fold in sides, and roll tightly. Seal with beaten egg.
  4. Heat oil in skillet to 350°F (175°C).
  5. Fry rolls in batches for 3–4 minutes until golden brown, turning occasionally.
  6. Drain on paper towels. Serve warm with dipping sauce.

Notes

These can be baked at 400°F for 12–15 minutes for a lighter version. Brush with oil before baking.
