Method
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, combine chicken, cheeses, cream cheese, salsa, taco seasoning, garlic powder, onion powder, smoked paprika, cilantro, and lime juice.
- Warm tortillas briefly in the microwave to make them easier to roll.
- Place 2–3 tablespoons of filling onto each tortilla and roll tightly.
- Arrange taquitos seam-side down on the baking sheet.
- Brush or spray taquitos lightly with olive oil.
- Bake for 15–20 minutes until crispy and golden brown.
- Serve hot with salsa, sour cream, or guacamole.
Notes
Warm tortillas before rolling to prevent cracking. Taquitos can be frozen before baking for easy future meals.
