Ingredients
  

Chicken Filling
  • 3 cups shredded cooked chicken
  • 1 cup shredded cheddar cheese
  • 1 cup Monterey Jack cheese shredded
  • 4 oz cream cheese softened
  • 0.33 cup salsa
  • 1 tbsp taco seasoning
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp smoked paprika
  • 2 tbsp cilantro chopped
  • 1 tbsp lime juice
Taquitos
  • 12 small tortillas flour or corn
  • 2 tbsp olive oil for brushing

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine chicken, cheeses, cream cheese, salsa, taco seasoning, garlic powder, onion powder, smoked paprika, cilantro, and lime juice.
  3. Warm tortillas briefly in the microwave to make them easier to roll.
  4. Place 2–3 tablespoons of filling onto each tortilla and roll tightly.
  5. Arrange taquitos seam-side down on the baking sheet.
  6. Brush or spray taquitos lightly with olive oil.
  7. Bake for 15–20 minutes until crispy and golden brown.
  8. Serve hot with salsa, sour cream, or guacamole.

Notes

Warm tortillas before rolling to prevent cracking. Taquitos can be frozen before baking for easy future meals.
