Ingredients
  

Crispy Chicken
  • 2 chicken breasts boneless, skinless
  • 1 cup breadcrumbs panko preferred
  • 0.5 cup all-purpose flour
  • 2 eggs
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 cup oil for frying
Caesar Dressing
  • 0.5 cup mayonnaise
  • 2 tbsp parmesan cheese grated
  • 1 tbsp lemon juice fresh
  • 1 tsp Dijon mustard
  • 1 tsp anchovy paste optional
  • 1 clove garlic minced
  • 2 tbsp olive oil
Salad
  • 2 heads romaine lettuce chopped
  • 0.5 cup parmesan cheese shaved
  • 1 cup croutons

Equipment

  • Mixing bowls
  • Skillet or frying pan
  • Tongs
  • Knife and cutting board

Method
 

  1. Slice chicken breasts into thinner cutlets for even cooking.
  2. Set up breading station with flour, beaten eggs, and seasoned breadcrumbs.
  3. Coat chicken in flour, dip into eggs, then coat with breadcrumbs.
  4. Heat oil in skillet and fry chicken 4–5 minutes per side until golden and cooked through.
  5. Whisk dressing ingredients together until smooth.
  6. Toss chopped romaine with dressing in a large bowl.
  7. Slice cooked chicken into strips.
  8. Top salad with chicken, parmesan, and croutons. Serve immediately.

Notes

For a lighter version, bake or air-fry the chicken instead of frying.
