Crispy Chicken Caesar Sandwich

Ingredients
  

Chicken
  • 2 large boneless skinless chicken breasts
  • 1 cup buttermilk for marinating
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs panko recommended
  • 0.5 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 eggs beaten
  • oil for frying vegetable or canola

  • 4 sandwich rolls or ciabatta buns
  • 2 cups romaine lettuce chopped
  • 0.5 cup Caesar dressing store-bought or homemade
  • 0.25 cup grated parmesan extra for topping
  • lemon wedges optional for serving

Method
 

  1. Slice chicken breasts lengthwise and marinate in buttermilk for at least 30 minutes.
  2. Mix flour, breadcrumbs, parmesan, garlic powder, paprika, salt, and pepper in a shallow bowl. Whisk eggs in another bowl.
  3. Dredge chicken in breadcrumb mix, dip in egg wash, and dredge again in breadcrumbs for a double coating.
  4. Heat oil in skillet and fry chicken 3–4 minutes per side until golden brown and cooked through.
  5. Toss chopped romaine lettuce with Caesar dressing until coated.
  6. Assemble sandwich with a roll, fried chicken, dressed lettuce, and extra parmesan. Serve with lemon wedges.

Notes

For a lighter option, use grilled chicken instead of fried.
