Ingredients
  

Chicken
  • 2 large chicken breasts
  • 1 cup panko breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 large egg
  • 2 tbsp all-purpose flour
  • 2-3 tbsp olive oil for frying
Sandwich Assembly
  • 4 ciabatta buns
  • 2 cups romaine lettuce chopped
  • 0.25 cup shaved Parmesan cheese
  • as needed Caesar dressing
  • optional lemon wedges

Method
 

  1. Slice chicken breasts horizontally to make two thin fillets and pat dry.
  2. Set up breading station: flour, egg, and panko mixture with Parmesan and spices.
  3. Coat each chicken fillet: flour, egg, then panko mixture.
  4. Heat olive oil in skillet over medium heat and fry chicken 3–4 minutes per side until golden and cooked through.
  5. Toast ciabatta buns lightly.
  6. Assemble sandwich: bottom bun, Caesar dressing, chicken, romaine, Parmesan, top bun.
  7. Serve immediately with lemon wedges.

Notes

Chicken can be baked instead of fried for a lighter version.
