Chicken
  • 2 lbs boneless skinless chicken breasts sliced into cutlets
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 2 cups Italian-style breadcrumbs
  • 0.5 cup grated parmesan cheese
  • 1 tsp garlic powder
Marinara Sauce
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 28 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 8 oz mozzarella cheese shredded

Method
 

  1. Prepare chicken cutlets and season with salt and pepper.
  2. Bread chicken using flour, eggs, and breadcrumb mixture.
  3. Fry chicken in olive oil until golden and crispy.
  4. Simmer marinara sauce ingredients until thickened.
  5. Assemble chicken with sauce and cheese in baking dish.
  6. Bake until cheese is melted and bubbly.

Notes

Use fresh parmesan and avoid over-saucing for best texture.
