Ingredients
  

Batter
  • 1 cup pancake mix
  • 0.75 cup milk
  • 1 egg large
  • 2 tbsp sugar optional
  • 1 tsp vanilla extract
For Frying
  • 12 large marshmallows
  • vegetable oil for frying
For Serving
  • powdered sugar for dusting
  • melted chocolate or caramel sauce optional

Method
 

  1. Whisk together pancake mix, milk, egg, sugar, and vanilla to make a smooth batter.
  2. Heat oil in a deep pan to 350°F (175°C).
  3. Dip marshmallows in batter using a fork or skewer.
  4. Fry marshmallows 20–30 seconds until golden and puffed.
  5. Drain on paper towels and let cool briefly.
  6. Dust with powdered sugar and serve with chocolate or caramel sauce.

Notes

Fry quickly to prevent marshmallows from melting completely inside.
