Ingredients
  

Flatbread Dough
  • 1.5 cups all-purpose flour
  • 1 tsp salt
  • 0.5 tsp baking powder
  • 2 tbsp olive oil
  • 0.5 cup warm water
Toppings
  • 5 oz brie cheese rind optional
  • 0.5 cup cranberry sauce
  • 1 tbsp honey
  • 1 tsp fresh thyme leaves plus extra for garnish
  • 1 tbsp olive oil for brushing

Method
 

  1. Preheat oven to 425°F (220°C). Place baking sheet or pizza stone inside to preheat.
  2. Mix flour, salt, and baking powder in a bowl. Add olive oil and water; stir until dough forms.
  3. Knead dough on floured surface for 2–3 minutes until smooth. Roll out thinly.
  4. Brush dough with olive oil and bake 5–7 minutes until slightly crisp.
  5. Top with brie slices, cranberry sauce, honey, and thyme. Return to oven for 7–10 minutes until golden and melted.
  6. Cool slightly, slice, garnish with thyme, and serve warm.

Notes

Best served fresh. Can substitute store-bought naan or pita for quick version.
