Ingredients
  

Fried Zucchini
  • 3 zucchini sliced into rounds
  • 1 cup flour
  • 2 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder
  • 3 eggs beaten
  • 1.5 cups breadcrumbs Italian style
  • oil for frying
Garlic Aioli
  • 1 cup mayonnaise
  • 3 cloves garlic minced
  • 1 tbsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Mixing bowls
  • Skillet or fryer
  • Wire rack
  • Tongs

Method
 

  1. Slice zucchini into 1/4-inch rounds and pat dry.
  2. Mix flour, salt, pepper, paprika, and garlic powder in a bowl.
  3. Whisk eggs in a second bowl and add breadcrumbs to a third bowl.
  4. Dredge zucchini first in flour, then egg, then breadcrumbs.
  5. Heat oil to 350°F and fry zucchini until golden, 2–3 minutes per side.
  6. Drain on rack or towels.
  7. Mix all aioli ingredients and chill before serving.

Notes

For extra crunch, use panko. Serve immediately for best texture.
