Ingredients
  

Croquettes
  • 2 cups mashed potatoes cold
  • 1 cup cooked ham diced
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 egg beaten
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup all-purpose flour
  • 1 cup breadcrumbs panko preferred
  • 2 cups vegetable oil for frying

Method
 

  1. Combine mashed potatoes, ham, cheese, salt, and pepper in a bowl.
  2. Shape mixture into small croquettes and chill for 20 minutes.
  3. Coat croquettes in flour, egg, and breadcrumbs.
  4. Heat oil to 350°F (175°C) in a pan.
  5. Fry croquettes until golden brown and crispy.
  6. Drain on wire rack and serve hot.

Notes

Croquettes can be frozen before frying for easy make-ahead meals.
